I don’t know about you but I sure do love an easy dinner. When I get home from work the last thing I want to do is spend hours cooking dinner. If you are like me, you will love this super easy one pan dinner.
For how hot it’s been this summer I love a meal that’s light and refreshing.
This one pan salmon and asparagus dinner will be ready in under an hour.
Preheat oven to 425.
Cover a cookie sheet pan with foil or use a silicone backing liner (I use this one)
Wash asparagus and then using a cutting board and knife to trim down the ends of the asparagus.
I like to take about a 1/2 inch off the end. I had a large salmon filet, so I also sliced it into four equal portions.
Next drizzle about 2 tablespoons of olive oil on the pan. Place salmon fillets, skin side down and asparagus next to the salmon. Drizzle another 2 tablespoons of olive oil on top of salmon and asparagus. Using a black peppercorn from a grinder, minced garlic and sea salt season the pan to taste.
Place the pan in the preheated oven and cook for 25-30 mins until Salmon is fully cooked and asparagus is tender.
I plated the salmon on a bed of spring lettuce mix. Add your favorite wine and enjoy!
