I love pizza and being on a low carb diet has really hampered with my ability to enjoy this amazing dish. After seeing a post about “Fathead dough” my life was changed forever. Fathead dough is so yummy and can be topped with any of your favorite pizza toppings, and even use it for desserts! Today I wanted to share my favorite recipe for fat head dough as well as my favorite toppings combo.
To begin with I want to remind everyone that anytime you substitute something you have to go into it knowing that it is most likely not going to be the same as the original.
With that being said last week I made some cauliflower chicken fried rice. Cauliflower is amazing because it can be used to mimic all kinds of other things because of mild taste. Some like it in their pizza crust, some like it mashed and some like it riced. I love cauliflower steamed but since started a low carb diet I haven’t had any rice or mashed potatoes and cauliflower has been such a life saver. Last week I was craving some Chinese, but since most Chinese is not Keto friendly, I decided to try my hand at cauliflower fried rice and get my cravings fix.
This week I closed the door (literally) to my first apartment and living alone. As I drove home to my new place I really began to reflect back on my little 500 sq. foot apartment and what living on my own has really taught me.
